Of peasant origin, spelt soup is a typical Umbrian dish of high nutritional value. Spelt is in fact a complete food, containing vitamins and mineral salts, and an excellent source of protein.
Ingredients for 4 people:
Spelt 200 g.
Ripe tomatoes 135 g.
Small onion 20 g.
Celery stalk with leaves 50 g.
Carrot 70 g.
Ham bone 1
Diced pancetta 100 g.
Grated pecorino cheese 25 g.
Salt 15 g.
Preparation
Soak a ham bone for 12 hours in warm water. Cut it in half, change the water, bring to boil with onion, carrot, celery, tomatoes, salt and cook for 3 hours. Filter the broth, bring to boil again, add the spelt and cook for about 20 minutes. Serve with strips of ham from the cooked bone and pecorino cheese.
Variation
If you don’t have a ham bone, you can use a pig’s foot and follow the same method (if you like you can give more flavour to the dish adding vegetables in season).
