Spoleto cuisine derives from an ancient, widespread rural tradition and from the deep connection between community and environment, based on respect and enhancement of the land's produce. A good number of restaurants offer delicious dishes using local ingredients, such as cereals, legumes, truffles, mushrooms, saffron, honey, chestnuts and asparagus, but also meat and cheese.
The star of every dish is undoubtedly extra virgin olive oil. In autumn, the process of olive harvesting and pressing is accompanied by tasting, entertainment and training initiatives aimed at promoting the culture of the so-called "green gold" and deepening the knowledge of its excellent qualities.
Among the most important events it is worth mentioning Frantoi Aperti, which every year, between October and November, offers a rich program of events that animate the mills scattered throughout the region.
The Spoleto area also boasts an excellent winemaking tradition, mainly linked to Trebbiano Spoletino, a straw-yellow DOC white wine, born from the rediscovery of an ancient native vine of the Spoleto Valley.
Many festivals and popular celebrations take place in the small hamlets around Spoleto, allowing visitors to delve into become immersed in the flavors and smells of local cuisine: from asparagus to crayfish, from the Trebbiano Spoletino wine to truffles, there is no shortage of opportunities to sample the area's gastronomic excellence and learn more about local traditions.
