Honey is an ancient food, used not only in cooking but also in cosmetics and medicine. In the Spoleto area, there are several beekeepers who produce high-quality honey, as evidenced by the national awards they have received in recent years.
Honey production is widespread throughout much of the Umbrian territory, and more and more people are approaching this ancestral activity, playing a fundamental role in the conservation of biodiversity and supporting agriculture. Beekeeping is indeed a very important profession for the protection of bees and the balance of ecosystems.
Many varieties of honey are produced in the area: Chestnut honey, very rich in minerals, especially iron, is suitable for convalescents, anemics, and athletes; Forest Honeydew honey, rich in iron and minerals, has antibiotic properties; Acacia honey, with antibacterial and anti-inflammatory properties; Sunflower honey, an excellent emollient for persistent coughs of the upper respiratory tract. The most produced and consumed honey is Wildflower honey, which is harvested in late spring/summer.
Honey pairs easily with many dishes, from main courses to desserts; it is particularly appreciated when paired with pecorino and aged cheeses.
